Food Roasting and Processing Salmonella Kill Step Validation Study

ISO 17025 Europe THird-Party Microbiology Laboratory needed for salmonella kill step validation study for food roasting and pressing steps. Based on our experience, the certified 3-rd party lab should have proper Salmonella surrogate (e.g. E. faecium) and is able to provide guidance to design and conduct the study. This study is expected to be designed with consideration of all the worst-case scenarios such as choosing the matrix that is the most difficult to be heated or treated, using the lowest temperature/shorted hold time that could possibly happen during actual manufacturing, etc. Then it will be likely to involve inoculation of samples with Salmonella surrogate before roasting and pressing steps. These inoculated samples before and after roasting and pressing steps will be sent to the 3rd-party lab will be working with and tested to see the salmonella surrogate reduction. It is expected that salmonella surrogate could be reduced by 5 logs or more after roasting and pressing steps. The third-party lab will then issue the validation study report to indicate study design, sample details, testing results, conclusion etc.
