Deformulating and Analyzing Stabilizer in Drinks

Food chemistry laboratory needed for deformulating a powdered stabilizer used in formulating a drink. The stabilizer has 3 ingredients; Gum Arabic, coconut oil, and birch sugar. I am trying to find out the percentages of each.
Do you do this type of deformulation?
If so, how much would that cost and what would the lead time be?
