Alternative Seafood Fish Product Development From Edible Mycelia

NEW PRODUCT DEVELOPMENT
FDA GMP Food Laboratory needed for assisting on the research and development of edible mycelia project to create an alternative seafood fish product.
We need contract labs or food-grade kitchens who could assist in us prototyping the following:
Is it feasible to directionally grow aligned edible fungal mycelia within a gel? If so:
? Can they investigate the properties of a protein gel 'media/substrate' to allow mycelial growth?
? Research how the fibers can be made to grow directionally (ideally across a ~1 cm thick sheet of protein gel)
? Investigate and screen for the preferred species of fungi for this type of application along with investigate the growth timelines of these preferred species?
? Investigate the processing conditions and technologies needed in order to extract or shape these mycelia in order to produce a flaky fish product?
