In the past, fish were classified and labeled according to their physical composition and histological properties.  Often this was done after the fish was filleted and harder to identify.  This can be a time consuming and inconsistent.  Newer technology allows for a DNA based scan of any sample of the fish or other type of meat with more accurate and reliable results.  Related tests can also be performed such as microbiology tests or antibiotic tests.
